BBQ baked potatoes
Whether you’re firing up the barbecue or settling in around a campfire, this easy baked potato recipe is a must-have for either occasion.
- 6 medium potatoes (scale up or down depending on how many guests you have)
- 2 tbsp olive oil
- Salt and pepper, to season
Heat up the barbecue.
Wash the potatoes to remove any dirt, then pat dry.
Brush each potato with olive oil and season with salt and pepper.
Wrap in tin foil and place on the grill, or on the hot coals of a campfire, and cook for around 40 minutes until crispy.
Alternatively, you can thread the potatoes onto long metal skewers and cook over the barbecue this way.
