Chocolate Ice Cream Sandwich
It’s that glorious time of year. That’s right - 2nd August - Ice Cream Sandwich Day, of course. We’re jolly glad it’s finally here too, as it gives us a perfect excuse to share our closely-guarded recipe of unlimited indulgence - Chocolate Ice Cream Sandwiches. Go on, it only comes round once a year, after all...
- 1L Chocolate Ice Cream, very SLIGHTLY softened (not too softened…)
- 115g butter
- 100g granulated white sugar
- 70g flour
- 30g cocoa powder
- 1 egg
- 1 tbsp vanilla extract
- A pinch of salt
Preheat your oven to around 180C. Line a rimmed baking sheet with baking paper.
Melt the butter by placing it over a low heat and stirring.
Take a large bowl, and whisk the melted butter with the sugar. Then whisk in the egg and vanilla extract, followed by the flour, cocoa powder and salt. Stir until the mixture is smooth.
Spread this mixture into the lined tray and bake for around 10 minutes, turning around half-way through to cook evenly. How do I know it’s done? Well, the cake should be dry to the touch and slightly come away from the edges of the pan. Place on a rack to cool.
Cut the cake in half with a serrated knife, crosswise. Spread only very slightly softened ice-cream across the top of one half. Smooth with a spatula before adding the other half of the cake to top it off. Don't let it melt!
Wrap in plastic and freeze until firm. Then cut into appropriate sizes with a serrated knife.
